Grilled Salmon

Grilling The Perfect Salmon

Grilling the perfect salmon fillets or steaks is easy with these simple steps. This marinade is the perfect combination of salty-sweet with hints of lemon and garlic.

Serves: 4

Ingredients:

1 1/2 pounds salmon fillets or steaks (see the difference)
Note: Buy wild caught salmon with the skin-on for ease of cooking, flavor and sustainability.
1 tablespoon lemon pepper or to taste
1 tablespoon garlic powder or to taste
½ Tablespoon salt or to taste
1/3 cup soy sauce
1/3 cup brown sugar
1/3 cup water
1/4 cup vegetable oil

 

Directions:

Rinse Salmon under cold water
Check for pin bones then pat the salmon dry.
Season salmon with lemon pepper, garlic powder, and salt.

In a small bowl, stir together soy sauce, brown sugar, water, and vegetable oil until sugar is dissolved. Place fish in a large re-sealable plastic bag with the soy sauce mixture, seal, and turn to coat. Refrigerate for at least 2 hours. Preheat grill for medium heat. Lightly oil grill grate. Place salmon on the preheated and oiled grill. For fillets, place skinless side down first. The salmon will release itself from the grill when it is ready. A 1” thick piece will cook in about 6 to 8 minutes per side or until the fish flakes easily with a fork.

Garnish with Lemon Slices. Serves 4

Grilled Shrimp

No Mess Grilled Garlic Shrimp

This is the perfect appetizer or main entrée for your outdoor grilling party. It is a simple dish that can be prepare ahead of time.

Serves: 4

Ingredients:

1 Pound unpeeled large shrimp
½ Stick of softened butter
1 Cup chopped parsley
2 Chopped Garlic Cloves
1 Lemon juiced
1 Big pinch of red pepper flakes
Salt & Pepper
Heavy Duty Foil Wrap

 

Directions:

In a bowl mix butter, parsley, garlic, lemon juice, red pepper, salt and pepper. Toss shrimp in mixture. Divide between 2 foil packets. Grill over high heat for 8 minutes.

Serve will lemon slices and cocktail sauce.

 

Grilled-Zucchini-and-Cherry Tomatoes

Grilled Zucchini and Cherry Tomatoes

This side dish brings all of the seasons tastes together on the grill. Topped with fresh grated Parmesan Cheese makes the entire combination delectable and perfect for grilling time.

Serves: 4

Ingredients:

2 Zucchinis sliced
1 Pint of cherry tomatoes quartered
4 Garlic cloves chopped fine
2 Tbsp. of olive oil
20 Fresh basil leaves chopped
Salt and pepper to taste
Fresh grated parmesan cheese to top at the end

 

Directions:

Toss zucchini, tomatoes, garlic, oil, basil, salt and pepper. Form a foil packet and pour ingredients inside and cover completely. Grill over high heat for 10 minutes. Be careful opening as steam will be intense when you open the foil. Top veggies with grated parmesan, and bon appétit!

 

Cucumber Basil Lime Cocktail

CUCUMBER, BASIL & LIME GIMLET COCKTAIL

This cocktail is perfect for grilling time. Refreshing and full of color.

Serves 1

Ingredients:

1.5 oz. Grey Goose Vodka
1 oz. Lemonade
.25 oz. Lime juice
1.5 oz. Fresh basil leaves
Thinly sliced cucumber (.25 inches)

 

Directions:

In a shaker, muddle the basil and cucumber at the bottom. Add the remaining ingredients and fill with ice. Shake well and strain into a tall glass filled with fresh ice.

Garnish with a lime wedge or cucumber wheel.
